Ask the Experts

My husband and I are long distance sailors. I have used a pressure cooker for years and love them. Are you able to clean this cooker in salt water and rinse in fresh water? I am concerned about the salt pitting the pan.
Susan, Victoria, BC

Boy, I've never washed any of my pressure cookers with salt water! You are wise to be concerned about salt. Technically the 18/10 stainless steel (surgical quality) that we use to make our cookers should be less affected by salt than other less expensive steel, but it will still pit if the salt is left on the cooker. Your idea to rinse the cooker in fresh water is critical to the upkeep of the unit. And be sure to dry it well. Remember that a bit of pitting shouldn't effect the use of our pressure cooker. Be sure to wash and dry the gasket by hand and have a couple of spares on hand in case one gets damaged when you are cruising. By the way, do you have any bread recipes for cruising that you would like to share?
