My recipes tell me to cook certain dishes at 15 pound and othersat 8 pounds. What weights and temperatures correspond to the rings onthe stem of the DUROMATIC safety valve?

Most cookbooks will indicate 8 and 15 pounds or low and high pressure. Our valve takes the guesswork out of pressure cooking by indicating visually how many pounds of pressure are present in the cooker. The first red ring (low) indicates 8 pounds (per square inch) which corresponds to 235 degrees F, and the second red ring is 15 pounds, which is 254 degrees F. This is all covered very well in our operating instructions as well as our cookbook, Quick Cuisine, which is included free with all of our cookers.
